Sweet Potato Country


 In the state of Alabama, Cullman County (in which we preside) ranks number ONE in sweet potato production.  Farm  country.  We even have a Sweet Tater Festival  My sister has been working on a farm that grows hundreds of acres of food from red potatoes to collard greens.  She occasionally brings me some home grown goodies.  This past week it was a big box of sweet potatoes and a beautiful bunch of collard greens.  I have been eating those wonderful green collards all week, I love them!  I really don't have the proper place to store potatoes.  I have always wanted a root cellar, but alas, I don't have one.  So, I put some of the potatoes in jars, nothing but pure sweet potatoes.  No salt, no water, just potatoes, and they came out wonderful!  
We are expecting a large crowd for Thanksgiving week, so the rest will come in handy.

I just adore roasted Sweet Potatoes. Maybe I should grow some.

OH I am so jealous! I can't imagine having that many sweet potatoes!

Oh how I wish I had planted some! Those look so yummy. I have never heard of canning them without water. I am going to have to try that the next time I have some. That way must make them much less mushy? Thanks for that great tip!

I've never heard of canning them. What a grand idea!

Umm! I love love sweet potatoes but unfortunately am the only one in the house who does. I'm a little jealous of all of yours!

I just brought sweet potatoes home from North Georgia. I was thinking I was going to use them for Sweet potato pie for Thanksgiving. I am keeping my fingers crossed that they will make it!
